Production: Our saffron fields are found in the well-drained, rich soil of the Pampore Highlands of the Kashmir Valley. The Highlands are perfect for saffron cultivation as the slopes of the hill attract the full power of the sunlight. Pure Kashmiri saffron is difficult to find on the world market for a few reasons:
93% of the saffron on the world market is produced by Iran, leaving little room for second place Greece, who are followed by Afghanistan and Morocco.
The crop yield in Kashmir has steadily been declining for years because of harsher weather climates, lack of funding for wells and irrigation systems (see what we are doing to help). 9.5 tonnes of saffron were produced in 2015-16 compared to 11.5 tonnes in 2010-11.
Qualities: The northern Indian region of Kashmir, is the only place in India, and the eastern most region in the world where saffron grows. It is in Kashmir that the cultivation of the darker red/maroon coloured saffron is found.
Storage: Store in a cool, dry, dark place in a sealed container.
